There should be an age-wall to permit seeing the explicit interests, which mean there has to be a flag on all interests that indicates if it is inside the age-wall, which would then permit auto-flagging an RP as Adult.

Yup. Should be.
This should extend to the other profile options too. Canons would be the lowest priority but some are inherently sexual.
Categories could just inherit their trait's Sexual flag. I'm not sure if there's any cases where we have sexual categories on non-sexual traits.
