I understand literally none of this and googling only shows a game with pixel art. Is there any kind of roleplay community around this?
Well, yeah, that's the art style of the game. And there can be roleplaying in the game itself, you can build homes and even spawn certain species using an item you craft. Basically it is as interactive as you make of it.
The suggestion is basically "Some stuff in this game is very good kick-starter for roleplays, can we have it as canon?"
What bothers me is - I never heard about roleplayers of Starbound, I know the game was deeply hated a month or two ago, and I don't think it is as established canon (or described enough) to be made into actual canon rather than be theme for roleplays.

Right, but being interactive doesn't mean it has a good canon. This as it sounds right now sounds like something you'd put under the setting trait.
There are races and very specific interactions between the races in the game that form a canon. It's not as in-depth as anything like an MMO or any general video game might be, but as it is, it is a very good baseline for a space adventure/story. Allowing it as a Canon would allow roleplayers to create characters belonging to these races and RP as such, so I think it's quite fair to allow Starbound as a canon.
There are also a RP community within Starbound that goes pretty far, but alas I am not a part of it.
Okay, I think what Ayla listed is forming some bare bones of what it needs to be considered for a canon.
I have nothing more against.

Is there a name for the starbound universe/canon that would be known to people who play within it? Or just Starbound?
That that I would know of. I think just Starbound is suitable, unless that would be conflicting with something else.
It is just Starbound, the systems are all generated by a seed so that when people start out they could be light years away from where someone else is in the game. And the names of the systems are named rather obvious filler names like the Beta HR 6907 Sgr 6206, with the planets basically being the name of the system followed by a or b.
