My only issues is that Profession sounds very specific and highly incompatible with current categories - both when you try to read them (profession of government?) and due to the fact that we will get very specific suggestions (potentially) as a result. Workfield/Work field or something similar would get rid of pesky of without these implications.

Hmmm. Maybe Employment? Employment of government reads naturally.
I suppose it would be better, yes. Surely better than Profession :)
