Right now, species are handled on a case by case basis. There are plans down the road for something more broad, but for now, if you want to have a gryphon species, the fastest way is to submit it as a trait option.
We definitely have Chimera, which is- like it or not- what a gryphon is. They're described as an amalgamation of other animal parts, so chimera works as-is.
